Marinated M’shrooms & Sticky Coconut Rice
Ingredients
- ashings of sesame oil
- soy sauce
- mirin
- LOTS and lots of garlic
- thumb of ginger
- miso
- pinch of chilli flakes
- squeeze of lemon juice
- dash of maple
Preparation
Marinate for an hour
Cook for 40 minutes until juicy and soft
Coconut rice
Cook brown rice in a tin of coconut milk, plus extra water if needed. Stir through a tsp of miso and sprinkle with sesame seeds
Served this with thawed edamame and cucumber, drizzled with ACV, EVOO, ? and soy
