Marinated M’shrooms & Sticky Coconut Rice

Ingredients

  • ashings of sesame oil
  • soy sauce
  • mirin
  • LOTS and lots of garlic
  • thumb of ginger
  • miso
  • pinch of chilli flakes
  • squeeze of lemon juice
  • dash of maple

Preparation

  1. Marinate for an hour

  2. Cook for 40 minutes until juicy and soft

  3. Coconut rice

  4. Cook brown rice in a tin of coconut milk, plus extra water if needed. Stir through a tsp of miso and sprinkle with sesame seeds

  5. Served this with thawed edamame and cucumber, drizzled with ACV, EVOO, ? and soy
