Mushroom Bazi

Ingredients

  • 300g button mushrooms
  • 1 large onion, finely sliced
  • 2-3 tbsp oil
  • 1 tsp salt (adjust to taste)
  • 3 green chillies, roughly chopped
  • 1 level tsp turmeric powder
  • 1 tsp curry powder
  • 1/2 tsp coriander powder
  • 1/3 tsp chilli powder (optional)
  • Fresh coriander for garnish

Preparation

  1. Finely slice the onion and button mushrooms.

  2. Heat the oil in a large pan. Once hot, add the onion and salt. Sauté until soft and translucent. Add the green chillies and fry for 2 minutes.

  3. Add the ground spices (be careful not to use too much turmeric powder as it may spoil the taste). Fry the spices for a few minutes.

  4. Add the sliced mushrooms, mix well, and cover to cook through. The mushrooms will release liquid as they cook, so remember to uncover the pan and stir to allow the moisture to evaporate.

  5. Once the mushrooms are cooked and most of the moisture has evaporated, garnish with fresh coriander and serve immediately. Enjoy!
