Mushroom Spinach Tomato Pasta

Ingredients

  • 1 pack chestnut mushrooms, sliced
  • Half a pack of baby spinach, torn up roughly
  • 1 large white onion, sliced
  • 3 cloves garlic, finely chopped
  • 2 tins chopped tomatoes
  • 1 tbsp tomato purée
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp balsamic vinegar
  • 1 tsp sugar
  • 2 tsp chilli flakes
  • Salt & pepper to taste

Preparation

  1. Slowly sauté the sliced onion until soft and start to turn colour.

  2. Add garlic and mushrooms. Sauté until cooked.

  3. Add tinned chopped tomatoes and quarter of a tin of water along with balsamic vinegar, herbs, sugar and seasoning.

  4. Let the sauce cook down for 20 minutes before adding pasta of your preference to the sauce, and garnish with Parmesan and a grind of pepper.

  5. Cook the pasta according to package instructions
