Oriental Noodle Salad with Chickpeas and Ajvar

Ingredients

  • 2 cups Noodles
  • 1 can Chickpeas
  • 5 tbsp Ajvar
  • 1 Chili Pepper
  • Handful Green Beans
  • 1 small Red Onion
  • 1 tsp Lemon Juice
  • 2 tbsp Olive Oil
  • 1 tbsp White Wine
  • Salt and Pepper to taste

To serve

  • Parsley
  • Dried Mint
  • Garlic Powder

Preparation

  1. Blanch the green beans in a large pot of salted water for 2 minutes, then drain.

  2. In the same water, cook the noodles until al dente as per package instructions.

  3. In a large salad bowl, mix the ajvar, white wine, lemon juice, olive oil, and salt and pepper to taste.

  4. Drain the cooked noodles and add them to the bowl with the sauce.

  5. Chop the red onion, chili pepper, green beans, and parsley, then add them along with the chickpeas to the mixture.

  6. Stir everything together to combine.

To serve

  1. Sprinkle with dried mint and garlic powder before serving.
