Easy Vegan Panaeng Curry Stew
Ingredients
- 1 onion
- Tofu 270 g
- 1 red pepper
- 1/2 zucchini
- 2 carrots
- 1 head of broccoli
- 1 can of coconut milk 400 ml
- 1 can of panaeng curry 400 ml
- 1/2 tsp black pepper
- 1 tsp salt
Preparation
Chop veggies and tofu into chunks.
In a wok pan, fry onion and tofu in some oil.
Add the rest of the vegetables and fry for a few minutes.
Pour the liquids into the stew and add the spices.
Put a lid on the wok pan and let the stew simmer for 10 min.
Serve with rice!
