Easy Vegan Panaeng Curry Stew

Ingredients

  • 1 onion
  • Tofu 270 g
  • 1 red pepper
  • 1/2 zucchini
  • 2 carrots
  • 1 head of broccoli
  • 1 can of coconut milk 400 ml
  • 1 can of panaeng curry 400 ml
  • 1/2 tsp black pepper
  • 1 tsp salt

Preparation

  1. Chop veggies and tofu into chunks.

  2. In a wok pan, fry onion and tofu in some oil.

  3. Add the rest of the vegetables and fry for a few minutes.

  4. Pour the liquids into the stew and add the spices.

  5. Put a lid on the wok pan and let the stew simmer for 10 min.

  6. Serve with rice!
