Peanut Noodles and Veg Bowl

Ingredients

  • brown rice noodles
  • 1 carrot, chopped
  • 1/2 lime
  • 1/2 red chilli, finely diced
  • 1/2 tbsp soy sauce
  • 1/2 a courgette
  • 1 tbsp sweet white miso paste
  • 1 tsp maple syrup
  • 1 heaped tbsp peanut butter (or tahini)
  • tofu, chopped
  • small handful of fresh mint

Preparation

  1. Saute tofu 5 mins, add soy sauce & cook 2 mins, add carrot & cook 3 mins

  2. Cook & rinse the noodles

  3. Mix miso, lime, maple & peanut butter

  4. Mix all ingredients
