Potato Vegetable Pie

Ingredients

  • 300 grams of sliced mushrooms
  • 1/2 a leek sliced
  • 1/2 a red onion diced
  • 1/2 cup of frozen peas
  • 1/2 cup of chopped spinach
  • 1 zucchini diced
  • 1 sweet potato diced
  • 500 grams of peeled potatoes
  • 1/4 cup cashew milk
  • 100 grams of chickpeas
  • 1/2 cup of barilla tomato sauce
  • 1 tablespoon of parsley
  • 2 tablespoons vegan butter
  • 1 1/2 teaspoon of salt
  • pepper
  • 1/3 cup vegetable liquid stock
  • 2 tablespoons of olive oil

Preparation

  1. In a pot with boiling salted water place the potatoes and boil until tender

  2. Prepare mash potatoes

  3. Place the potatoes in a bowl and add butter, 1 teaspoon of salt, pepper, parsley, cashew milk and combine

  4. Set aside

  5. In a fry pan place 2 tablespoons of oil, 1/2 teaspoon of salt, leek, peas, spinach, onion, sweet potato, mushrooms, chickpeas and zucchini

  6. Sauté for 10 minutes then add the tomato sauce and liquid stock

  7. Cook for 15 minutes on medium heat or until liquid has evaporated

  8. In a pie dish place the vegetable mixture and spread out evenly then add the mashed potatoes on top

  9. Use a fork to make the rough edges

  10. Bake for 20 minutes at 180 or until golden brown on top
