Protein Power Masala Chickpea Bowl

Ingredients

  • 170g Holy Moly Tzatziki
  • 1 onion
  • 1 tablespoon garam masala
  • 4 garlic cloves
  • 5cm piece fresh ginger
  • 2 red finger chillies
  • 20g fresh coriander or parsley
  • 400g tin chickpeas
  • 800g tin chopped tomatoes
  • 1 pack rice
  • 500g spinach
  • 200g red cabbage
  • 200g tofu
  • oil
  • soy sauce
  • sugar
  • salt
  • lemon juice
  • black pepper

Preparation

  1. Heat oil in a medium pan, add onion and garam masala, and cook for 5 minutes.

  2. Add garlic, ginger, chillies, and chopped herbs, and cook over low heat for 3-5 minutes until fragrant.

  3. Add chickpeas and tomatoes, bring to a boil, reduce heat, and simmer uncovered for 20 minutes until thick.

  4. Add sugar, salt, and lemon juice to taste.

  5. Heat olive oil in a skillet with garlic, add spinach, and cook for 5 minutes until wilted, then season with salt and pepper.

  6. Toss tofu in soy sauce and crisp each side in a hot pan.

  7. Cook rice according to package instructions.

  8. To serve, place chickpea masala in one corner of a bowl, add cooked rice in another corner, then add shredded red cabbage, spinach, and tofu.

  9. Finally, add a generous spoonful of Holy Moly Tzatziki and serve.
