Protein Power Masala Chickpea Bowl
Ingredients
- 170g Holy Moly Tzatziki
- 1 onion
- 1 tablespoon garam masala
- 4 garlic cloves
- 5cm piece fresh ginger
- 2 red finger chillies
- 20g fresh coriander or parsley
- 400g tin chickpeas
- 800g tin chopped tomatoes
- 1 pack rice
- 500g spinach
- 200g red cabbage
- 200g tofu
- oil
- soy sauce
- sugar
- salt
- lemon juice
- black pepper
Preparation
Heat oil in a medium pan, add onion and garam masala, and cook for 5 minutes.
Add garlic, ginger, chillies, and chopped herbs, and cook over low heat for 3-5 minutes until fragrant.
Add chickpeas and tomatoes, bring to a boil, reduce heat, and simmer uncovered for 20 minutes until thick.
Add sugar, salt, and lemon juice to taste.
Heat olive oil in a skillet with garlic, add spinach, and cook for 5 minutes until wilted, then season with salt and pepper.
Toss tofu in soy sauce and crisp each side in a hot pan.
Cook rice according to package instructions.
To serve, place chickpea masala in one corner of a bowl, add cooked rice in another corner, then add shredded red cabbage, spinach, and tofu.
Finally, add a generous spoonful of Holy Moly Tzatziki and serve.
