Quick Tomato Basil Cauli Rice

Ingredients

  • olive oil
  • 12 oz bag of cauliflower rice
  • frozen roasted veggies (approx 1 packed cup)
  • salt and pepper
  • grated gruyere / cheddar mix
  • fresh basil
  • red pepper flakes

Preparation

  1. Heat a saucepan to medium.

  2. Add olive oil, cauliflower rice, frozen roasted veggies, and salt and pepper.

  3. Cook, stirring, until warmed through.

  4. Add grated gruyere and cheddar mix.

  5. Serve with fresh basil and red pepper flakes.
