Risotto Recipe:-With Mushrooms and Peas-

Ingredients

  • 3 dl risotto rice
  • 2 dl white wine
  • 8 dl water with 1 vegetable stock
  • 1 tbsp chanterelle fond
  • 6 dl chanterelle
  • 2 tbsp vegan butter
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 dl peas

Preparation

  1. Start frying chopped onion and garlic in a pan, in a good amount of oil

  2. After 2 min, add the rice

  3. Fry for 2 more minutes before adding the liquids

  4. Let the risotto simmer on medium heat for 20 min, until the liquid has cooked down

  5. Stir in between

  6. Meanwhile fry the chanterelle

  7. Fry the chanterelle in some butter, salt and pepper until they get some colour

  8. Add them to the risotto, together with the peas and stir everything together

  9. Ready to serve
