Roasted Buffalo Cauliflower Bowl with Vegetables
Ingredients
- 1 head of cauliflower
- 2 tablespoons olive oil
- 1 cup hot sauce of choice
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- salt and pepper to taste
Bowl additions
- tomatoes
- rice
- black beans
- onions
- guacamole
Preparation
Cut 1 head of cauliflower into florets and coat with 2 tablespoons olive oil.
Preheat oven to 425°F.
Add cauliflower to a baking sheet and bake for 25 minutes.
In a small bowl, mix 1 cup hot sauce, 1 teaspoon cumin, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, and salt and pepper.
Remove cauliflower from oven, add back to a bowl, and coat with the hot sauce mixture.
Assembly
Cook rice with some coconut oil for flavor.
Serve the buffalo cauliflower with tomatoes, black beans, onions, and guacamole to make a filling bowl.
