Roasted Butternut Squash Sauce with Gardein Meatballs

Ingredients

  • 1 small Butternut Squash. Peeled and cubed >1 red bell pepper
  • > 1 carrot >1 celery >1 onion >6-8 Vine Ripe tomatoes >6 bulbs of garlic smashed yet whole >Season with rosemary, oregano, thyme, paprika, crushed red pepper salt and pepper

Preparation

  1. Cut up all the veggies. Roast them at 425’F for about 30 mins. Until they get nice and flavorful ?. Wait for it to cool. Throw it in a blender with about 2 cups of leftover pasta water. Season if it needs it but it prolly won't need anything but salt. >In a pot saute half diced onion with minced garlic, wait til it's caramelized and then add the sauce. The sauce should be on a medium heat and let it cook for about 30 min. 10 mins into the sauce cooking add the meatballs.bIt should get nice and thicc (like me for the holidays)
