Soy Sesame Soba Noodle Bowl
Ingredients
- 75g soba noodles
- 100g smoked tofu, chopped
- 1 bunch of Bok choy
- 1 cup broccoli florets
Sauce
- 2 tablespoons Kecap manis (sweet soy sauce)
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 3 tablespoons water
- 2 teaspoons sesame oil
- *Optional: Chilli oil
Garnish
- Spring onion
- Sesame seeds
- Avocado, sliced
Preparation
Bring a large pot of water to a boil. Add in the noodles and vegetables and cook the noodles according to packet instructions (about 3 minutes).
Whilst the noodles are cooking, make the sauce by whisking together all the remaining ingredients in a large bowl.
Once the noodles are done, drain them along with the vegetables and transfer to a serving bowl.
Pour the sauce over the noodles and mix well.
Top with tofu, spring onion, avocado and sesame seeds. Serve!
