Soy Sesame Soba Noodle Bowl

Ingredients

  • 75g soba noodles
  • 100g smoked tofu, chopped
  • 1 bunch of Bok choy
  • 1 cup broccoli florets

Sauce

  • 2 tablespoons Kecap manis (sweet soy sauce)
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 3 tablespoons water
  • 2 teaspoons sesame oil
  • *Optional: Chilli oil

Garnish

  • Spring onion
  • Sesame seeds
  • Avocado, sliced

Preparation

  1. Bring a large pot of water to a boil. Add in the noodles and vegetables and cook the noodles according to packet instructions (about 3 minutes).

  2. Whilst the noodles are cooking, make the sauce by whisking together all the remaining ingredients in a large bowl.

  3. Once the noodles are done, drain them along with the vegetables and transfer to a serving bowl.

  4. Pour the sauce over the noodles and mix well.

  5. Top with tofu, spring onion, avocado and sesame seeds. Serve!
