Spicy Homemade Beans
Ingredients
- 400g of tinned beans - haricot/ cannellini/ kidney (whatever you have your hands on)
- 400g chopped/plum tinned tomatoes
- 1 large onion, diced finely
- 2 cloves of garlic, minced or crushed
- 1 bay leaf
- 1tsp dried thyme
- 1tsp cumin powder
- 1tsp chilli flakes
- 1 tsp regular chilli powder (i use moruga scorpion so i only add a pinch)
- salt and pepper to taste
Preparation
Heat oil in a pan, add diced onions and bay leave
Sauté until translucent then add garlic, herbs and spices
Sauté until the raw garlic smell disappears
Add tomatoes and mash with the back of a spoon so the tomato bits break up
Add the beans, season and stir
Simmer for at least half an hour or longer for a richer, thicker sauce
Serve with sausage, mash, baked potato, cottage pie, fried chicken
