Spicy Homemade Beans

Ingredients

  • 400g of tinned beans - haricot/ cannellini/ kidney (whatever you have your hands on)
  • 400g chopped/plum tinned tomatoes
  • 1 large onion, diced finely
  • 2 cloves of garlic, minced or crushed
  • 1 bay leaf
  • 1tsp dried thyme
  • 1tsp cumin powder
  • 1tsp chilli flakes
  • 1 tsp regular chilli powder (i use moruga scorpion so i only add a pinch)
  • salt and pepper to taste

Preparation

  1. Heat oil in a pan, add diced onions and bay leave

  2. Sauté until translucent then add garlic, herbs and spices

  3. Sauté until the raw garlic smell disappears

  4. Add tomatoes and mash with the back of a spoon so the tomato bits break up

  5. Add the beans, season and stir

  6. Simmer for at least half an hour or longer for a richer, thicker sauce

  7. Serve with sausage, mash, baked potato, cottage pie, fried chicken
