Spiralized Carrot Cake Cookies

Ingredients

  • 1/2 cup medjool dates
  • 1/2 cup raisins
  • 1/2 cup nondairy milk
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 cup shredded carrots
  • 1 1/4 cup oat flour
  • 1 tsp baking powder

Preparation

  1. Blend the dates, raisins, non-dairy milk, cinnamon, baking powder, and vanilla on high until you have a thick paste

  2. Add the shredded carrots and oat flour. Blend on low speed until combined. Don’t over blend

  3. Shape into balls, arrange on a baking tray, flatten into cookies

  4. Bake for 15 mins at 350F. Cool then enjoy
