Spiralized Carrot Cake Cookies
Ingredients
- 1/2 cup medjool dates
- 1/2 cup raisins
- 1/2 cup nondairy milk
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1 cup shredded carrots
- 1 1/4 cup oat flour
- 1 tsp baking powder
Preparation
Blend the dates, raisins, non-dairy milk, cinnamon, baking powder, and vanilla on high until you have a thick paste
Add the shredded carrots and oat flour. Blend on low speed until combined. Don’t over blend
Shape into balls, arrange on a baking tray, flatten into cookies
Bake for 15 mins at 350F. Cool then enjoy
