Squid W/ Tomatoes and Peas It

Ingredients

  • 200g ripe tomatoes ⁣
  • large handful frozen peas ⁣
  • 1.5 tbs finely diced onion ⁣
  • 1 tbs chopped garlic ⁣
  • 1 tbs chopped parsley ⁣
  • salt and pepper to taste ⁣
  • good quality evoo ⁣

Preparation

  1. Blanch tomatoes for 1 min. Peel skin then course my chop keeping all juices. ⁣

  2. In a saucepan add about 4 tbs EVOO and sweat onions and garlic for 1-2 min before adding parsley then tomatoes and their juices. Cover the pan and simmer for 10 minutes. ⁣

  3. Add squid, salt and pepper, then cover and simmer for 40 mins. Add thawed peas after 40 mins then simmer for 3-4 mins. Test squid to make sure it’s super tender, adjust for salt. Enjoyyyyy
