Teriyaki Fried Chickpeas and Veggies with Rice Noodles

Ingredients

  • 125g rice noodles
  • 1/2 red onion
  • 75g chickpeas
  • 1 broccoli, cut into florets
  • Sundried tomatoes
  • 3-4 tbsp teriyaki sauce
  • Oil for frying
  • Lime juice
  • Sesame seeds

Preparation

  1. Boil the rice noodles in water for 2-4 minutes according to package instructions.

  2. Drain the noodles and set them aside.

  3. In a frying pan, add a tablespoon of oil and heat it over medium heat.

  4. Add the chickpeas, diced red onion, broccoli florets, and sundried tomatoes to the pan.

  5. Sauté the ingredients until the chickpeas and onions have developed some color.

  6. Pour 3-4 tablespoons of teriyaki sauce into the pan with the sautéed ingredients.

  7. Stir and cook on medium heat. You can choose a teriyaki sauce with lower sugar content if desired.

  8. Combine the cooked rice noodles with the sautéed chickpeas and veggies, coating everything with the teriyaki sauce.

  9. Plate the rice noodle and veggie mix.

  10. Add some extra boiled broccoli on the side.

  11. Drizzle lime juice over the dish and sprinkle with sesame seeds for added flavor and garnish.
