Tofu Grilled Skewers
Ingredients
- 400g. tofu
- 5 x skewers
- marinade:
- 1/2 cup of oil
- 1/2 cup tomato puree
- 3 tablespoons of vinegar
- 1/2 cup of onion (1/2 onion)
- 5 tablespoons of maple syrup
- 3 teaspoon curry
- 1/2 teaspoon pepper
Preparation
Start with marinade: Finely chop the onion. In a bowl mix all the ingredients. Mix well and adjust vinegar or sweetness if needed. Put the lid on and set aside in the fridge until serving
Tofu: Dry the tofu in towels until excess liquid is absorbed
Cut the tofu in squares and cook on a pan in olive oil. Cook a few minutes until golden.� Add the tofu on the skewers and slather generously with marinade. Grill the skewers in 10 min. until golden and grilled on each sides. Serve with extra grill marinade on top, flatbreads, hummus and summer salad
