Spicy Tomato Tuna Rolls

Ingredients

  • 4-5 roma tomatoes
  • 1⁄4 cup @califiafarms Go Coconuts
  • 1⁄3 cup vegan mayo
  • 1 T sriracha
  • 1 tsp Sugar
  • 1⁄4 tsp Salt
  • 1 T Sesame oil
  • 1 T sesame seeds
  • 2 tsp soy sauce

Preparation

  1. Boil water in a big pot.

  2. Poke holes all around the tomatoes.

  3. Place tomatoes in the boiling water until the skin starts to peel off.

  4. Quickly transfer to ice water and peel off the skin.

  5. Slice around the seeds of the tomatoes and roughly chop them.

  6. Place the chopped tomatoes in a bowl with vegan mayo, go coconuts, sriracha, sugar, salt, sesame oil, sesame seeds, and soy sauce.

  7. Strain the mixture to remove some liquid, but not all of it, to retain some moisture.

  8. Make rolls using seaweed, sticky rice, asparagus, avocado, and cucumber.
