Vegan Chilli Con Carne with Mashed Potatoes

Ingredients

  • meat free mince
  • 1 tablespoon olive oil
  • 1 diced onion
  • dry chilli mix seasoning
  • 1 tin chopped tomatoes
  • 1 can kidney beans in chilli sauce
  • 1 can black beans (rinsed and drained)
  • splash of water (if needed)
  • salt and pepper
  • potatoes
  • plant based butter
  • splash of plant based milk
  • 1 tablespoon nutritional yeast

Preparation

  1. If the meat free mince is frozen, soak it in water for 5 minutes, then drain, rinse, and squeeze out any water.

  2. Lightly fry the mince in 1 tablespoon of olive oil for 2-3 minutes.

  3. Add one diced onion and cook for 2-3 minutes.

  4. Stir in the dry chilli mix seasoning and add one tin of chopped tomatoes.

  5. Add one can of kidney beans (in chilli sauce) and one can of black beans (rinsed and drained first), then season with salt and pepper.

  6. Add a splash of water if the mixture is too thick and let it simmer for 15 minutes.

  7. For the mash: Peel and boil potatoes until soft.

  8. Mash the potatoes with a masher, add some plant-based butter, a splash of plant-based milk, and 1 tablespoon of nutritional yeast for a creamy and cheesy sensation.
