Vegan Dandelion Salad with Potatoes and Beans
Ingredients
- a big bowl of thoroughly cleaned dandelion
- 4 big potatoes, cut into discs and cooked
- 4 heaped tablespoons of white beans
- 1 tablespoon of dijon mustard
- 1 tablespoon of ground flax seed
- 1 clove of minced garlic
- 1 teaspoon of dried dill
- apple cider vinegar to taste
- salt to taste
- black salt to taste
- roasted pepitas for garnish
Preparation
Throw all ingredients into one bowl, use potatoes hot and do not let them cool.
Mix everything thoroughly.
Sprinkle with roasted pepitas and black salt before serving.
Note that potatoes will break apart to form a thick dressing, pepitas add crunch, and black salt provides an eggy taste.
