Vegan Seitan Bbq Ribs

Ingredients

  • 1 cup vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 2 cloves garlic (minced)
  • 1 cup barbecue sauce

Preparation

  1. In a large bowl, mix together the vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper

  2. In a separate bowl, combine the vegetable broth, soy sauce, tomato paste, maple syrup, and minced garlic

  3. Pour the wet mixture into the dry ingredients and stir to combine, then knead the dough for about 5 minutes until elastic

  4. Shape the dough into rib-like pieces or logs

  5. Steam the seitan pieces for 30-40 minutes or simmer in water until firm

  6. Preheat a grill or oven, brush the seitan with barbecue sauce, and cook until the sauce caramelizes and the seitan is heated through
