Vegetarian Spicy BBQ Jackfruit Tacos

Ingredients

  • 1-20oz can Young Green Jackfruit
  • 1 small onion, diced
  • 2-3 tbsp BBQ sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp lime juice
  • Avocado oil

Preparation

  1. Drain and rinse jackfruit.

  2. Put in a food processor and chop until jackfruit is shredded.

  3. Sauté the diced onion in avocado oil over medium heat until translucent, about 5 minutes.

  4. Add the jackfruit, BBQ sauce, cumin, chili powder, and lime juice to the pan.

  5. Cover and let it cook until the jackfruit is tender, about 15-20 minutes.

  6. Build your tacos the way you like them! I layered ours with queso, salsa, guacamole, jackfruit, and coleslaw. Trust me with the coleslaw, it gives it a great crunch!!
