Vegetarian Spicy BBQ Jackfruit Tacos
Ingredients
- 1-20oz can Young Green Jackfruit
- 1 small onion, diced
- 2-3 tbsp BBQ sauce
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp lime juice
- Avocado oil
Preparation
Drain and rinse jackfruit.
Put in a food processor and chop until jackfruit is shredded.
Sauté the diced onion in avocado oil over medium heat until translucent, about 5 minutes.
Add the jackfruit, BBQ sauce, cumin, chili powder, and lime juice to the pan.
Cover and let it cook until the jackfruit is tender, about 15-20 minutes.
Build your tacos the way you like them! I layered ours with queso, salsa, guacamole, jackfruit, and coleslaw. Trust me with the coleslaw, it gives it a great crunch!!
