Veggie Chickpea Burrito Bowl

Ingredients

  • 1.5 bell peppers
  • 1 cup sliced red cabbage
  • 1/3 cup onions
  • 1 15 oz
  • can chickpeas
  • 1 teaspoon each chili powder
  • kosher salt
  • garlic powder
  • oregano
  • cumin
  • 1/4 teaspoon black pepper and a couple teaspoons oil
  • Guac
  • 1 avocado, juice of 1/2 lemon or lime, generous dash of salt, garlic powder and pepper, 2 T finely chopped onion, minced chili to taste, 1 T chopped cilantro (or sub parsley)

Preparation

  1. Slice 1

  2. Bell peppers, 1 cup sliced red cabbage, 1/3 cup onions

  3. Add onions and 1 15 oz

  4. Can chickpeas (drained) to large skillet with 1 teaspoon each chili powder, kosher salt, garlic powder, oregano, cumin, 1/4 teaspoon black pepper and a couple teaspoons oil

  5. After 5 min cooking, add red cabbage and bell peppers

  6. Cook another 5 min w/lid on, stirring occasionally

  7. Serve with lime wedge, guac (below), sliced tomatoes, cilantro, raw onion, greens and/or rice
