・Whole Wheat Penne Pasta⁣

Ingredients

  • zucchini⁣
  • yellow summer squash⁣
  • baby bella mushrooms⁣
  • sun dried tomatoes⁣
  • 2 cans great northern beans - drained not rinsed⁣
  • store bought marinara - i like delallo​ fat free marinara sauce⁣
  • mixed greens ( kale, swiss chard, spinach )⁣
  • white sweet onions⁣
  • a lot of fresh garlic⁣
  • soy sauce, mrs. dash garlic & herb, nutritional yeast for extra seasoning⁣

Preparation

  1. I cooked up the veggies till just tender

  2. Precooked the pasta till almost done but still has some bite to it

  3. Put all that in a big bowl along with the sauce, beans, sun dried tomatoes ( not oil packed) and greens and mixed it up

  4. Poured it out into a couple of casserole dishes and topped with scoops of

  5. Just squish it all together lol )

  6. Baked on 400 for about an hour is depending on how hungry you are, how big your casserole dish is and how well cooked all your ingredients were before you popped it in the oven. ⁣⁣

  7. Serve with an extra sprinkle of fresh parsley and some nutritional yeast
