A Big Bowl of Fried Cauli-Rice with Chicken Sausage

Ingredients

  • 1 tbsp butter
  • 1 cup shiitake mushrooms, thinly sliced
  • 1 tsp ginger, grated
  • 1/2 cup sweet onion, diced
  • 1/2 cup carrots, diced
  • 1 lb ground pork or ground chicken
  • 2 tbsp coconut aminos
  • 1 tsp fish sauce
  • 1/4 tsp ground black pepper
  • 2 large eggs
  • 2-3 cups cauliflower rice
  • 1/4 cup green onions, chopped

Preparation

  1. In a large skillet over medium heat, melt butter

  2. Sauté and stir mushrooms, ginger and onion for 2-3 minutes

  3. Add carrots and ground pork, breaking apart pork sausage until cooked through

  4. Add coconut aminos, fish sauce and ground black pepper; stir for 1-2 minutes

  5. Remove mixture from skillet and place in heat-resistant bowl

  6. Set aside

  7. Crack, stir and scramble eggs in skillet

  8. Add cauliflower rice, green onions and pour pork mixture back into skillet

  9. Combine thoroughly, stirring for 4-5 minutes

  10. Top with green onions and serve!
