Baked Vegan Gingerbread Donuts

Ingredients

  • 2 Tablespoons flax seeds
  • 1/2 cup melted coconut oil
  • 1/3 cup coconut or raw sugar
  • 1/3 cup unsulfured molasses
  • 1/2 cup unsweetened applesauce
  • 1/2 cup non dairy milk
  • 2 cups flour (I used #spelt)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg

Preparation

  1. Preheat oven to 350 degrees. Lightly grease 2 large or mini donut pans. In a large bowl mix 2 Tablespoons flax seeds with 6 Tbsp water. Set aside and gather your other ingredients. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  2. Then grab your large bowl with the flax egg in it, and stir in coconut oil, coconut sugar, molasses , applesauce and non dairy milk. Stir well. Then add flour, baking soda, baking powder and spices. Stir until just blended. Pour into prepared donut tin and bake 15-18 minutes. Allow to sit for at least 10 minutes before turning out. Sprinkle with confectioners sugar, enjoy
