Baked Vegan Gingerbread Donuts Holiday Delight

Ingredients

  • 2 Tablespoons flax seeds
  • 1/2 cup melted coconut oil
  • 1/3 cup coconut or raw sugar
  • 1/3 cup unsulfured molasses
  • 1/2 cup unsweetened applesauce
  • 1/2 cup non dairy milk
  • 2 cups flour (I used spelt)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg

Preparation

  1. Preheat oven to 350 degrees.

  2. Lightly grease 2 large or mini donut pans.

  3. In a large bowl, mix 2 Tablespoons flax seeds with 6 Tbsp water. Set aside and gather your other ingredients.

  4. Stir in coconut oil, coconut sugar, molasses, applesauce, and non-dairy milk into the flax egg mixture. Stir well.

  5. Add flour, baking soda, baking powder, and spices. Stir until just blended.

  6. Pour into prepared donut tin and bake for 15-18 minutes.

  7. Allow to sit for at least 10 minutes before turning out.

  8. Sprinkle with confectioners sugar and enjoy.
