Banana Bread with Hugo's Chocolate Peanut Clusters
Ingredients
- 2 ripe bananas
- 1/2 cup raw brown sugar
- 3/4 cup melted coconut oil
- 1 teaspoon vanilla bean paste
- 1 cup all-purpose flour
- 1/2 cup whole meal
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 tablespoon apple cider vinegar
- 3/4 cup Hugo's Chocolates chocolate peanut clusters, chopped
Preparation
Preheat the oven to 180°C and grease and flour a baking tin.
In a mixing bowl, mash bananas and sugar together. Add in coconut oil and vanilla and mix until well combined.
Add in both flours and baking powder, mix until just combined.
In a small bowl, combine baking soda and apple cider vinegar together, then stir the mixture into the batter.
Add in chopped chocolate peanut clusters and mix until combined.
Pour batter into the prepared baking tin and bake for 45 to 60 minutes until golden brown and a toothpick inserted in the center comes out clean.
Allow 5 minutes to cool in the tin before removing. Cool completely on a rack. Slice and enjoy!
