Banana & Chocolate Ganache Cake

Ingredients

  • 200g butter
  • 200g white sugar
  • 2 medium eggs
  • 200g self raising flour
  • 2 tsp baking powder
  • 2 - 3 tbsp milk
  • for the ganache
  • 100g milk chocolate
  • 2 tbsp double cream

Preparation

  1. Peel and mash the bananas in a small bowl using a fork

  2. Place all the ingredients for the cake (leave out the milk at this stage) and whisk together. Add the milk and whisk till smooth. Fold in the previously mashed bananas now

  3. Melt the chocolate + double cream in short 20 second bursts in the microwave till the chocolate has melted

  4. Pour the cake batter into a lined square cake tin (my tin measured 24 × 24cm). Add random dollops of the chocolate ganache on top and use a skewer to swirl it through the batter. Bake in a preheated oven for 30 - 40 minutes at 180°C, gas mark 4 or until a skewer when inserted into the middle of the cake comes out clean

  5. Allow the cake to cool down and cut into squares, serve as is or with custard and enjoy
