Beans on Toast with Shroomdogs

Ingredients

  • 2 packs Sainsbury's Love Your Veg chorizo style shroomdogs
  • 1 red onion
  • 2 cloves garlic
  • 1 tablespoon tomato puree
  • 1 cup LEON brown sauce
  • 1 cup passata
  • 2 cans beans (butter beans recommended)
  • bread of choice for toasting
  • olive oil

Preparation

  1. Cook the shroom dogs according to pack instructions and set aside

  2. In the same pan add the olive oil and cook the onion till soft

  3. Add the garlic and cook for another two minutes

  4. Add the tomato puree and cook for a minute or so, stirring constantly

  5. Add the brown sauce and passata and mix well

  6. Add the beans and cook on a low heat for ten minutes

  7. Return the shroom dogs to the pan, cook for another five minutes to heat through

  8. Serve over a thick slice of toast
