Berry Antioxidant Salad with Raspberry Dressing

Ingredients

Dressing

  • 6 tablespoons red wine vinegar
  • 3 tablespoons maple syrup
  • 1 teaspoon salt
  • 1 teaspoon ground mustard
  • 1/2 cup avocado oil
  • 1 cup fresh or frozen raspberries, thawed
  • 2 teaspoons poppy seeds

Salad components

  • one bag organic arugula
  • sliced organic berries
  • avocado
  • dragon fruit
  • handful of pepitas

Preparation

  1. Blend all the dressing ingredients except poppy seeds in a blender for 10 seconds.

  2. Add poppy seeds and pulse once or twice.

  3. Store the dressing in a glass jar in the fridge for up to 7 days.

  4. Arrange one bag of organic arugula in a salad bowl.

  5. Top with sliced organic berries, avocado, dragon fruit and a handful of pepitas.

  6. Drizzle with the freshly made dressing and serve.
