Spicy Buffalo Cauliflower Bites

Ingredients

  • Parchment paper
  • Nonstick cooking spray
  • 2 Tbsp. buffalo hot sauce
  • 1/4 cup water, divided use
  • 1 (12 oz.) bag cauliflower florets (approx. 3 cups)
  • 2 Tbsp. low-fat ranch dressing
  • 3 medium celery stalks, cut into sticks

Preparation

  1. Preheat oven to 375° F. Line baking sheet with parchment paper; coat with spray. Set aside.

  2. Combine hot sauce and 2 Tbsp. water in a large bowl; mix well. Add cauliflower and toss to coat.

  3. Arrange cauliflower on prepared baking sheet; bake 30 to 35 minutes, turning once, until cauliflower is golden brown.

  4. Combine ranch dressing and remaining 2 Tbsp. water in a small bowl.

  5. Serve cauliflower with dressing and celery.
