Butter Cookies with Chocolate Filling

Ingredients

Filling

  • 1/2 cup cream cheese
  • 1/4 cup powdered sugar
  • 1/2 cup liquid cream
  • 1 tablespoon cocoa powder

Dough

  • 1 and 1/3 cups butter, softened
  • 1 cup powdered sugar
  • 3 1/2 cups flour
  • 1 large egg
  • 1/2 teaspoon orange or lemon zest

Preparation

  1. Place the rack in the middle of the oven and preheat the oven to 180°C.

  2. Prepare shallow baking sheets and line them with parchment paper.

  3. In the mixer bowl, place the butter and sugar for the dough. Attach the beater and mix on medium speed for 3 minutes. Add the flour, egg, and orange or lemon zest, then mix on medium speed until the dough forms.

  4. On a floured surface, roll out the dough to about 1/2 cm thick using a rolling pin. Cut into circles with a 2-inch round cookie cutter.

  5. Place the dough circles on the prepared sheets, leaving 1 inch between each.

  6. Bake for 12 minutes or until the bottom is golden brown.

  7. Remove from the oven and let cool for a few minutes. Transfer to a wire rack using a wide metal spatula and let cool completely.

  8. For the filling: In the mixer bowl, place the cream cheese, powdered sugar, liquid cream, and cocoa powder. Attach the whisk and mix on medium speed until a thick cream forms.

  9. Using a wide metal knife, spread the cream on half of the cookie pieces. Top with the remaining cookies and press lightly to adhere.
