Butter Cookies with Chocolate Filling
Ingredients
Filling
- 1/2 cup cream cheese
- 1/4 cup powdered sugar
- 1/2 cup liquid cream
- 1 tablespoon unsweetened cocoa powder
Dough
- 1 3/4 cups soft butter
- 1 cup powdered sugar
- 3 1/2 cups flour
- 1 large egg
- 1/2 teaspoon orange or lemon zest
Preparation
Set the oven rack in the middle and preheat the oven to 180°C.
Prepare shallow baking sheets with parchment paper.
For the dough, in the mixer bowl place butter and sugar, attach the paddle attachment and mix on medium speed for 3 minutes, then add flour, egg, and orange or lemon zest and mix on medium speed until cookie dough forms.
On a floured surface, roll out the dough to about 1/2 cm thick and use a 2-inch round cookie cutter to cut out circles.
Place the circles on the baking sheets, leaving 1 inch between each.
Bake for 12 minutes or until the bottom is golden brown.
Remove from oven and let cool for a few minutes, then transfer to a wire rack using a wide metal spoon and let cool completely.
For the filling, in the mixer bowl place cream cheese, powdered sugar, liquid cream, and cocoa powder, attach the whisk attachment and mix on medium speed until a thick cream forms.
Using a wide metal knife, spread the cream on half of the cookie pieces, place the remaining cookies on top and press lightly to adhere.
