Cherry Tart with Almond Filling

Ingredients

  • 1 1/4 cups flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 cup soft butter
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/3 cup cherry jam

Filling

  • 1 cup almonds
  • 2/3 cup sugar
  • 1/2 cup soft butter
  • 1/2 teaspoon almond extract
  • 2 large eggs

Preparation

  1. Set the middle rack in the oven and preheat to 180 degrees Celsius.

  2. Prepare a 9-inch tart pan with a removable bottom.

  3. In a food processor with a metal blade, combine flour, sugar, baking powder, and butter. Process on medium speed until the mixture resembles bread crumbs.

  4. Add the egg and vanilla extract, then pulse until the dough forms.

  5. Place the dough in the pan and press it to cover the bottom and sides. Spread the cherry jam over it and chill in the refrigerator for 30 minutes.

  6. For the filling, in a food processor, combine almonds, sugar, butter, almond extract, and eggs. Process on medium speed until smooth, then spread over the dough in the pan.

  7. Bake in the oven for 30 to 35 minutes until the tart is golden brown.

  8. Remove from the oven and cool on a wire rack before serving.
