Cake Donuts

Ingredients

  • Carrot donuts (make 10 medium donuts)
90 g carrots
  • freshly grated 
1 tsp organic orange peel 
70g white spelt flour
35g almond flour 
6 g baking powder 
70 g fine coconut sugar (pulse in a blender until fine)
25g sunflower seed oil 
1 flax egg for vegan 
Pinch of salt

Preparation

  1. Place the grated carrots with the oil in a food processor and process until puréed

  2. Combine the egg with the sugar and the orange peel and whisk until it whitens

  3. Add the almond flour and the carrot purée and combine with a spatula

  4. Combine flour, salt and baking powder and sift into the egg mixture

  5. Fill the mold and bake at 180 Celsius for 16 min or until golden brown
