Carrot Cake Ingredients:

  • 100ml coconut oil, melted
  • 275g self raising flour (half wholemeal half white)
  • 100g granulated sugar
  • 100g brown sugar
  • 1tsp baking powder
  • 4 carrots
  • 170ml cold water
  • 1 heaped tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 100g walnuts
  • icing:
  • 250g butter
  • 500g icing
  • 1 tsp vanilla

Preparation

  1. Pre heat the oven to 180c

  2. Mix together dry ingredients and then pour in the wet and stir until just combined but smooth

  3. Line a loaf tin and pour in the mixture

  4. Bake in the oven for 35-40 minutes

  5. Check with a toothpick towards the end if its done

  6. If it comes out clean)

  7. Leave the cake to cool completely

  8. Mix icing ingredients together and pour over the top once cooled

  9. Finish with a final dusting of chopped walnuts
