Vegan Veggie and Beef Quesadilla
Ingredients
- Chopped white onions
- Oil or aquafaba
- Salt (optional)
- Mushrooms
- Bell peppers
- Vegan beef patty
- Soy-free vegan butter
- Gluten-free tortilla
- Vegan cheese
- Chopped cherry tomatoes (for garnish)
- Cilantro (for garnish)
Bbq fajita marinade
- Lime juice (1/4 cup)
- BBQ sauce (1/4 cup)
- Liquid smoke (1/2 teaspoon)
- Maple syrup (1/2 tablespoon)
- Hot sauce of choice (1-3 teaspoons)
- Fajita seasoning (2 tablespoons)
- Smoked paprika (1/2 tablespoon)
- Veggie broth (1-3 tablespoons)
Preparation
Sauté and cook down the chopped white onions in oil or aquafaba in a pan. Add a bit of salt if needed.
Make the BBQ fajita marinade with lime juice, BBQ sauce, liquid smoke, maple syrup, hot sauce of choice, fajita seasoning, smoked paprika, and veggie broth.
Add mushrooms, bell peppers, and broken-down vegan beef patty to the pan and let them cook down.
Pour the BBQ fajita marinade over the cooked veggies and cover the pan to let the juices soak in.
Once everything is cooked down, transfer the cooked veggies and beef to a separate bowl.
In a pan, melt 1 tablespoon of soy-free vegan butter and lay down a gluten-free tortilla.
Add vegan cheese to the tortilla, then the cooked veggies and beef, cover with more vegan cheese, and top with a second tortilla.
Press the quesadilla down and let it cook until one side is golden brown and the cheese melts.
Flip the quesadilla and cook the other side.
Garnish with chopped cherry tomatoes and cilantro.
