Cheese + Veggie + Beef Quesadilla
Ingredients
- Lime Juice (1/4 Cup)
- -BBQ Sauce (1/4 Cup)
- -Liquid Smoke (1/2 Tsp)
- -Maple Syrup (1/2 Tbs)
- -Hot Sauce of Choice (1-3 Tsp)
- -Fajita Seasoning (2 Tbs)
- -Smoked Paprika (1/2 Tbs)
- -Veggie Broth (1-3 Tbs)
- Chopped White Onions
- Oil or Aquafaba
- Mushrooms
- Bell Peppers
- and Vegan Beef Patty
- 1 Tbs Soy-Free Vegan Butter
- Chopped Cherry Tomatoes and Cilantro
Preparation
Sauté and cook down your Chopped White Onions in Oil or Aquafaba in a pan. Add a bit of salt if needed.
Make your BBQ Fajita Marinade with:
Lime Juice (1/4 Cup)
BBQ Sauce (1/4 Cup)
Liquid Smoke (1/2 Tsp)
Maple Syrup (1/2 Tbs)
Hot Sauce of Choice (1-3 Tsp)
Fajita Seasoning (2 Tbs)
Smoked Paprika (1/2 Tbs)
Veggie Broth (1-3 Tbs)
Add in your Mushrooms, Bell Peppers, and Vegan Beef Patty (broken down) into the pan and let them all cook down.
Pour your BBQ Fajita Marinate over your cooked Veggies and cover your pan to let the juices soak in.
Once everything is cooked down, transfer your cooked veggies + beef to a separate bowl.
Start your Quesadilla with 1 Tbs Soy-Free Vegan Butter in your pan and lay down your Gluten Free Tortilla.
Add on @followyourheart vegan cheese to the tortilla and then your cooked Veggies + Beef. Cover with another layer of vegan cheese and then top with your second tortilla.
Press the quesadilla down and let it cook and the cheese melt down until one side is golden brown.
Flip your Quesadilla and cook it on the other side.
Garnish with Chopped Cherry Tomatoes and Cilantro.
