Chinese Steamed Buns with Tofu Filling

Ingredients

Dough

  • 450g wholemeal flour
  • 1 tbsp dried yeast
  • 1 tsp sugar
  • 280ml lukewarm water

Filling

  • 1 onion
  • 4 cloves garlic
  • 2cm fresh ginger
  • 240g tofu
  • 1 tbsp soy sauce
  • 1 carrot
  • 1/2 sweet potato
  • 1 pepper
  • 5 mushrooms
  • a handful of shredded kale
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tbsp Chinese cooking wine

Preparation

  1. Knead the dough for 5 minutes in a mixer, then leave it to rise.

  2. Finely chop the onion, garlic, and ginger, then stir fry for 1 minute.

  3. Add the finely diced tofu and stir fry for a few minutes.

  4. Add 1 tablespoon of soy sauce and stir for 30 seconds.

  5. Add the grated carrot, finely diced sweet potato, finely chopped pepper, chopped mushrooms, and shredded kale, then stir fry until cooked.

  6. Add another 1 tablespoon of soy sauce, 1 tablespoon of mirin, and 1 tablespoon of Chinese cooking wine, stir fry briefly, and remove from heat.

  7. Roll out the dough into a long sausage and cut into 20 pieces.

  8. Roll each piece into circles.

  9. Place 1 tablespoon of the filling mixture onto each dough circle, bring the edges together, pinch and twist to form parcels.

  10. Place each parcel on a square of baking paper in a steamer and steam for 10 minutes.
