Chocolate Chip Cookies

Ingredients

  • 1 cup whole grain rolled oats
  • 12 pitted medjool dates
  • 1/4 cup vegan dark chocolate chips

Preparation

  1. Preheat the oven to 350 degrees

  2. Add the oats to the food processor and blend until they reach flour consistency

  3. Add the dates to the food processor and blend for 2-3 minutes, until the mixture comes together into a ball of thick dough

  4. Measure out 2 tbsp of dough and shape into cookies (to make 7 total), then set on a parchment or silicone mat-lined baking sheet

  5. Press chocolate chips into the top of each cookie, then bake for 10 minutes

  6. Let the cookies cool on the sheet for at least 15 minutes before carefully removing

  7. Store leftovers in a container at room temperature or in the fridge
