Cinnamon Carrot Oat Bars

Ingredients

  • 1/2 cup oat flour
  • 1/2 cup plant milk
  • Lots of cinnamon
  • 1/2 tsp baking powder
  • 1 ginormous carrot (grated)
  • 1-2 tbsp maple syrup
  • 2 chopped dates

Preparation

  1. Preheat the oven to 350F.

  2. In a mixing bowl, combine the oat flour, plant milk, cinnamon, baking powder, grated carrot, maple syrup, and chopped dates.

  3. Stir the mixture until all the ingredients are evenly mixed.

  4. Pour the mixture into a baking dish.

  5. Bake in the preheated oven for 20-25 minutes or until the top looks dry and fully baked.

  6. Remove from the oven and let it cool before cutting into bars.
