Coconut and Lemon Bliss Balls with Chocolate Whip

Ingredients

  • 1/2 cup desiccated coconut
  • 1/2 cup ground almonds
  • 1 scoop vanilla protein powder
  • 1 tbsp melted coconut oil
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1/4 cup soya milk
  • 30g dark chocolate
  • 1 tsp lemon juice

Preparation

  1. Combine all ingredients except dark chocolate and 1 teaspoon lemon juice together in a bowl and use your hands to yield 12-14 balls.

  2. Place the balls on baking paper on a baking tray and leave to chill in the fridge for 30 minutes.

  3. Melt the chocolate in the microwave then stir in lemon juice and top each ball with a chocolate whip.

  4. Chill in the fridge for an hour before enjoying.
