Oat and Nut Chocolate Barfi
Ingredients
- 2 tablespoons coconut oil
- 4-5 tablespoons maple syrup or honey
- 60 grams ground oats
- 60 grams ground cashew nuts
- 60 grams ground almonds
- 30 grams desiccated coconut
- 80 grams cashew butter
- 3 drops cardamom extract or 1/4 teaspoon ground cardamom powder
- 100 grams dark chocolate
Decorations
- Edible rose petals
- Desiccated coconut
Preparation
Warm the coconut oil, maple syrup and cashew butter in a heavy pan.
Add all the other ingredients except the chocolate and decorations and stir until the mixture comes together.
Flatten into a glass Pyrex dish approximately 12 x 20 cm or a silicone mould.
When cool, melt the chocolate in the microwave and pour a layer over the barfi mix.
Sprinkle on the edible rose petals and coconut and leave to set.
When set, cut into cubes and enjoy.
