Oat and Nut Chocolate Barfi

Ingredients

  • 2 tablespoons coconut oil
  • 4-5 tablespoons maple syrup or honey
  • 60 grams ground oats
  • 60 grams ground cashew nuts
  • 60 grams ground almonds
  • 30 grams desiccated coconut
  • 80 grams cashew butter
  • 3 drops cardamom extract or 1/4 teaspoon ground cardamom powder
  • 100 grams dark chocolate

Decorations

  • Edible rose petals
  • Desiccated coconut

Preparation

  1. Warm the coconut oil, maple syrup and cashew butter in a heavy pan.

  2. Add all the other ingredients except the chocolate and decorations and stir until the mixture comes together.

  3. Flatten into a glass Pyrex dish approximately 12 x 20 cm or a silicone mould.

  4. When cool, melt the chocolate in the microwave and pour a layer over the barfi mix.

  5. Sprinkle on the edible rose petals and coconut and leave to set.

  6. When set, cut into cubes and enjoy.
