Peanut Butter Oat Squares

Ingredients

Base

  • 3 cups / 270g oats
  • 1 cup / 100g ground almonds
  • 1/2 cup / 140g Manilife deep roast crunchy peanut butter
  • 2 flax eggs (2 tbsp ground flax and 6 tbsp water)
  • 1/2 cup / 160g maple syrup
  • pinch sea salt

Topping

  • 100g / 3/4 cup chocolate of your choice
  • 1 tsp coconut oil
  • 4 dollops of Manilife deep roast crunchy peanut butter

Preparation

  1. Preheat oven to 180C.

  2. Blend most of the oats to a coarse flour. Leave about 3/4 cup of the oats whole for texture and put them into a large bowl.

  3. Add the peanut butter, ground almonds, maple syrup and flax eggs. Mix well until you have a dough. Hands work best for this.

  4. Put into a lined square baking dish and press down firmly so it goes into the corners.

  5. Bake for 15 minutes.

  6. Allow to cool a little before gently lifting out of the baking dish using the paper. Then allow to cool fully.

  7. When the base has cooled, prepare the topping.

  8. Melt the chocolate with the coconut oil by putting it into a glass bowl and microwaving at 600W in 30 second bursts. Mix using a spatula until melted.

  9. Pour the melted chocolate over the cooled base and dollop the peanut butter on top. Using a toothpick, swirl it around to mix a little bit but not too much.

  10. Pop into the fridge to set for about 20 minutes.

  11. Using a sharp knife, cut into 9 squares.

  12. Enjoy!
