Plant Strong Black Bean Brownies

Ingredients

  • 1 15-oz. can black beans
  • 2 large flax eggs (2 heaping tbsp (~16 g) flaxseed meal + 6 tbsp (90 ml) water
  • 2 tbsp coconut oil (melted)
  • 1 scoop plant strong vanilla
  • 1/4 tsp sea salt
  • 1 tsp pure vanilla extract
  • 1/2 cup maple syrup
  • 1 1/2 tsp baking powder
  • evenly distribute the batter into the paper muffin cups in a muffin pan

Preparation

  1. Preheat oven to 350 degrees

  2. Prepare flax egg by combining flax and water in bowl for a few minutes

  3. I smashed the beans up in the bowl first

  4. Bake for 22 minutes or until the tops are dry and the edges start to pull away from the sides

  5. Remove from oven and let cool for 30 minutes before removing from pan

  6. Store in refrigerator
