Vegan Coconut Cream Frosting for Special Occasions

Ingredients

  • 1/2 cup butter, softened but not melted
  • 1/2 cup canned coconut milk (mostly the thick cream part)
  • 1 teaspoon vanilla
  • 3 cups powdered sugar
  • optional: handful of fresh raspberries

Preparation

  1. Make your own powdered sugar if desired by blending organic sugar in a high-speed blender until powdery.

  2. Use a hand mixer to blend all the ingredients together.

  3. Refrigerate the mixture for about 10 minutes before using.

  4. Add a handful or two of fresh raspberries before blending if you want a pink frosting.
