Vegan Coconut Cream Frosting for Special Occasions
Ingredients
- 1/2 cup butter, softened but not melted
- 1/2 cup canned coconut milk (mostly the thick cream part)
- 1 teaspoon vanilla
- 3 cups powdered sugar
- optional: handful of fresh raspberries
Preparation
Make your own powdered sugar if desired by blending organic sugar in a high-speed blender until powdery.
Use a hand mixer to blend all the ingredients together.
Refrigerate the mixture for about 10 minutes before using.
Add a handful or two of fresh raspberries before blending if you want a pink frosting.
