Easy Vegan Ramen

Ingredients

  • 400g ramen noodles
  • 1.5 cups cilantro
  • 2 carrots thinly sliced
  • 4 tbsp chopped green onion
  • 4 cloves minced garlic
  • 1 tbsp finely chopped ginger
  • 6 cups vegetarian chicken stock
  • 2 cups unsweetened soy milk
  • 4 tsp sesame seeds
  • 1/4 cup white miso paste
  • 2 tbsp soy sauce
  • 1/4 cup tahini
  • 2 tbsp white vinegar
  • 2 tbsp chili oil

Preparation

  1. In a bowl, combine the white miso, tahini, soy sauce, chili oil, and vinegar and mix to create a paste. Then set aside.

  2. In a pot, add the stock and soy milk over high heat and bring to a simmer.

  3. In a separate pot, boil the ramen, ginger, and garlic for 2 minutes.

  4. Using 4 serving bowls, divide the initial paste, the ramen, garlic, and ginger, then top with the stock and soy milk mix.

  5. Next, add the carrots, green onion, cilantro, and sesame seeds, and any other desired toppings.

  6. Enjoy.
