Fluffy Vegan Pancakes
Ingredients
- 1/2 cup spelt flour ⠀
- 1 slightly heaped teaspoon baking powder⠀
- pinch of salt⠀
- 125mls / 1/2 cup + 1 teaspoon non-dairy milk⠀
- 1 teaspoon chia seeds⠀
- 1/2 teaspoon apple cider vinegar⠀
- 1 teaspoon vanilla extract⠀
Preparation
Start by preparing your chia egg by mixing your chia seeds and milk together. Add in your vinegar and vanilla and stir. ⠀
In a separate bowl, add in your flour, baking powder and salt. Mix well.⠀
Combine your wet ingredients into your dry ingredients and slowly combine. Leave to rest for 5-10 minutes. Begin to heat your pan.⠀
Cook your pancakes on your pre-heated pan, and get flipping! Once done, serve and enjoy
