French Crepes for a Large Batch
Ingredients
- 375 grams of flour
- 3 pinches of salt
- 75 grams of powdered sugar
- 6 eggs
- 90 grams of melted butter
- 3 tablespoons of crรจme fraรฎche
- 1 liter of milk (slightly less depending on flour)
- vanilla sugar
Preparation
In a bowl, mix the flour, salt, and sugar.
Make a well and add the eggs.
Start mixing to incorporate the flour into the eggs.
Gradually add the melted butter and continue mixing.
Add the crรจme fraรฎche and mix again.
Gradually add the milk and mix with an electric beater.
Heat a crepe pan or non-stick skillet over medium heat.
Lightly grease the pan with butter or oil.
Pour a ladleful of batter and swirl to spread evenly.
Cook until the edges brown and bubbles form on the surface.
Flip and cook the other side briefly until golden.
Repeat with the remaining batter.
